The one pot we tell people to buy first. Made in Italy in cast aluminium with a two-layer ceramic non-stick coating — heavy enough to hold an even heat across the base, so what is at the edge cooks at the same rate as what is in the middle.

Food slides off it, it takes high heat with almost no oil, and it is handsome enough to carry from the stove to the table without decanting into a serving dish.

• Cast aluminium holds an even heat across the base, so what is at the edge cooks at the same rate as what is in the middle.
• The ceramic surface releases food with very little oil.
• Handsome enough to go from the hob straight to the table without decanting.

Wash by hand in warm soapy water with a soft sponge, and dry before storing. A ceramic non-stick surface lasts far longer out of a dishwasher.

• Let the pot cool before washing — cold water on a hot base can warp cast aluminium.
• Use wooden, silicone or nylon utensils; a steel edge will score any non-stick coating.
• No abrasive pads, scouring powder or oven cleaner.
• Cook on low to medium heat — the ceramic layer does not need a high flame to release food.
• Avoid aerosol cooking sprays, which leave a residue that dulls the non-stick.
